His roots run deep in the fertile soils of the Western Slope of Colorado, where a legacy of farming and ranching has shaped his identity. With a passion for sustainable practices and a commitment to high-quality beef, Lonny has translated generations of agricultural wisdom into the foundation of LB Specialty Beef, ensuring a legacy that reflects his dedication to the land and its bounty.

Erin Croke, a proud Colorado native, is the marketing specialist and co-founder of LB Specialty Beef. Her deep connection to the land is reflected in her dedication to promoting sustainable ranching and sharing the story of high-quality, locally raised beef. Erin's role extends beyond the office—astride her horse, Dozer, she actively participates in managing the herds during their summertime grazing in Colorado’s scenic pastures. With a blend of marketing expertise and hands-on ranching experience, Erin ensures that LB Specialty Beef embodies a legacy of care for the land, the livestock, and the community it serves.
