Classic Beef Stew

Warm up with this hearty beef stew recipe, featuring tender chunks of beef, fresh vegetables, and rich, savory broth. Perfect for a cozy family dinner or meal prep!


Ingredients:

  • 2 lbs beef stew meat, cubed

  • 3 Tbsp flour

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 3 Tbsp olive oil

  • 1 yellow onion, chopped

  • 6 cups beef broth

  • 1/2 cup red wine (a cabernet sauvignon is a good choice)

  • 1 lb potatoes, peeled & cubed into 1" cubes

  • 4 carrots, cut into 1" pieces

  • 4 celery, cut into 1" pieces

  • 3 Tbsp tomato paste

  • 1 tsp dried rosemary

  • 1 Bay leaf

  • 2 Tbsp cornstarch

  • 2 Tbsp water

  • Fresh parsley


Instructions:

  1. Combine the flour, garlic powder, and salt & pepper - coat the beef cubes in the mixture.

  2. In a large dutch oven or crockpot, heat the oil. Cook the beef and onion until browned.

  3. Add beef broth and red wine, scrape up any browned beef/onion in the pan.

  4. Stir in all remaining ingredients except for cornstarch and water. Reduce heat to medium low and simmer for 60-90 minutes (until beef is tender).

  5. Stir together cornstarch and water to create a slurry (use more cornstarch and/or water if necessary). Slowly add the slurry to the simmering stew until you reach your desired consistency.

  6. Salt & pepper to taste.

  7. Garnish with fresh parsley
