Classic Beef Stew

Warm up with this hearty beef stew recipe, featuring tender chunks of beef, fresh vegetables, and rich, savory broth. Perfect for a cozy family dinner or meal prep!
Ingredients:
2 lbs beef stew meat, cubed
3 Tbsp flour
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
3 Tbsp olive oil
1 yellow onion, chopped
6 cups beef broth
1/2 cup red wine (a cabernet sauvignon is a good choice)
1 lb potatoes, peeled & cubed into 1" cubes
4 carrots, cut into 1" pieces
4 celery, cut into 1" pieces
3 Tbsp tomato paste
1 tsp dried rosemary
1 Bay leaf
2 Tbsp cornstarch
2 Tbsp water
Fresh parsley
Instructions:
Combine the flour, garlic powder, and salt & pepper - coat the beef cubes in the mixture.
In a large dutch oven or crockpot, heat the oil. Cook the beef and onion until browned.
Add beef broth and red wine, scrape up any browned beef/onion in the pan.
Stir in all remaining ingredients except for cornstarch and water. Reduce heat to medium low and simmer for 60-90 minutes (until beef is tender).
Stir together cornstarch and water to create a slurry (use more cornstarch and/or water if necessary). Slowly add the slurry to the simmering stew until you reach your desired consistency.
Salt & pepper to taste.
Garnish with fresh parsley
