Ingredients:
2 lbs beef chuck or stew meat (LB Specialty Beef, cut into bite-sized pieces)
2 tablespoons olive oil or beef tallow
1 large onion, chopped
2 cloves garlic, minced
3 large carrots, sliced
2 celery stalks, chopped
3 medium potatoes, diced
2 tablespoons tomato paste
1 bottle (12 oz) Guinness Stout
4 cups beef broth
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon smoked paprika
2 bay leaves
Salt and pepper to taste
2 tablespoons flour (for thickening, optional)
Fresh parsley for garnish
Instructions:
Brown the beef: Heat the olive oil or beef tallow in a large pot over medium-high heat. Season the beef with salt and pepper, then sear in batches until browned on all sides. Remove and set aside.
Sauté the vegetables: In the same pot, add the onions, garlic, carrots, and celery. Cook until softened.
